Last Mile Learning provides free, contextualized learning resources to professionals working in the development and relief sectors. Last Mile Learning is an initiative of LINGOs, a non-profit organization that promotes sustainable global development by building the capacity of the people delivering programs around the world. The Last Mile Learning facilitator resources are free and open source.
Each course in the Last Mile Learning includes a set of curricular materials that can be used by facilitators to lead face-to-face workshops or facilitated on-line training events (in both blended asynchronous or blended synchronous formats).

You don’t say what country you are in. How to set up an NGO in one country is different than in another. For instance, nonprofits in the USA are set up very differently than charities in the UK, and even the way they are legally allowed to engage and talk about volunteers is vastly different. A book or web site specific to your country will be better than a course for all that you need to do to set up an NGO. I have a page that offers VERY basic info that should be valid in any country:

There are lots of courses on grant writing. Any Internet search will help you find them. They are expensive, but worth it. Again, books can also help. I have a page on the very basics of writing proposals for fundraising

Project management is an entirely different discipline than the previous actions. If you have a Masters Degree in International Human Rights and Social Justice, then project management – design, goal setting, evaluation – should have been at the heart of the entire degree.
